DAL MAKHNI….!
India is a conglomeration of many distinct cultures and this fact is well reflected in the Indian food. Indian Cuisine has many world famous dishes to its credit. Dal Makhni is one such very well known item from the northern Indian cuisine. This humble dish is a trademark staple food of Punjab region and happens to be very popular in almost all the continents of the world. It is a perfect blend of spices, with lentils and some vegetables.
The Dal basically refers to Lentils while Makhani means Butter in Punjabi. Urad Dal (also known as black gram or black whole lentil) is the primary ingredient of Dal Makhani beside this; kidney beans, fine chopped onion, good amount of tomato puree & a lump of fresh cream or butter to add a rich flavor to it.
The making of this delicacy needs some pre-preparation. The kidney beans (rajma) need to be soaked in water for about 5-7 hours before cooking. After they soften, they are cooked with Urad Dal (black lentils) in a pressure cooker. Some amount of garlic cloves & an inch of ginger are added to it. The cooked ingredients are smashed well and Sauté. Later these are heated with blabs of butter, cumin’s, chopped onion, tomato puree & some basic spices. In a while fresh cream is added and garnished to serve.
